Following in the footsteps of chef/owner Jeffrey Buben, Vidalia's chef de cuisine R.J. Cooper was named James Beard Foundation's 2007 Best Chef: Mid-Atlantic. This award-winning team is dedicated to American regional cuisine, and though the Dixie accent is slightly less detectable than in its early years, the menu still pays tribute to Southern flavors. Practically-all-lump crab cakes, creamy sweet shrimp and grits, and slightly crisp veal sweetbreads are the excellent result, all of which can be paired with an outstanding supporting cast of sides such as baked macaroni and cheese with goat milk cheddar. The impressive selection of wines includes multi-course friendly sampler flights, three-ounce pours and half bottles. One of Washingtonian magazine's 100 Best Restaurants of 2008. One of The Washington Post's Top 50 Restaurants of 2007. Full bar. Serving lunch Mon–Fri, dinner nightly.
