Since opening Judy Fu's Snappy Dragon in 1993, Taiwan native Judy Fu has established her restaurant as a commercial and critical success. Located in the Maple Leaf neighborhood, Snappy Dragon's casual dining room is run efficiently and effectively by Fu's son, David. The extensive Mandarin and Szechwan menu features such delicacies as Fu's house-made noodles and hand-rolled dumplings. Starters include crispy vegetable spring rolls, pork-filled wontons in a spicy peanut sauce, Mandarin chicken wings and green onion pancakes. Snappy Dragon's most renowned dish is the tender pork- or vegetable-filled boiled dumpling called jiao-zi. They're so popular that there's a dumpling bar complete with full-time dumpling chef. Other house specialties include chicken noodle salad, Dave's Crispy Smoked Duck, and salt and pepper prawns or squid. Less familiar menu items include the Beijing Burrito, which is shredded pork in Peking sauce served with scallions, hoisin sauce and pancakes. Serving lunch Mon–Sat, dinner nightly.
