At Korea House in Santa Clara, patrons are not only introduced to Korean fare, but also the way in which the cuisine is traditionally presented. Motherly hostesses help tables select an entrée for each diner, including a main dish in addition to an array of condiments on the side. Servers are constantly refilling the sides of kimchee, octopus salad, sardines, cucumber, tofu and sprouts. Huge dishes include Korean-style barbecued short ribs, rice noodles with beef curry, oxtail soup and sengsun-jjige, a seafood casserole with snapper, shrimp, scallops, tofu, octopus, spinach and raw egg. There are also rice cakes topped with hot pepper sauce, onion pancakes served with seafood. At lunch, patrons can order off the menu or enjoy the buffet table. Plus, Korea House takes care of its regulars – in compliance with a concept known as saabisu (service), the staff will sometimes give free tastes or dishes to its most valued customers.
