The largest fast-casual Greek restaurant chain in the country, San Diego-based Daphne's Greek Cafe now has more than 65 locations throughout California and Arizona. Founder and former pro soccer player George Katakalidis retired from the San Diego Shockers after a toe injury in the late 1980s. Unemployed, he noticed there weren't nearly as many Greek restaurants in the area as were in his home of Toronto. His first executive chef was his mother. More than 15 years later, the dine-in or take-out menu features traditional fare that has been lightened up to take out a lot of the oil and spiciness typical with in Greek cooking. Specialties include fried calamari , spicy Greek chicken salad, gyros or shrimp pita sandwiches, a combo plate with either spanakopita (spinach and feta stuffed in phyllo dough and fried) or chicken or steak kebab, oven-roasted lemon chicken, and a veggie combo plate with spanakopita, falafel, dolmas (stuffed grape leaves) and hummus.
