Traditionally, at day's end in Greek villages, men and women gather at the local agora (market) to enjoy some wine, well-prepared food and the company of good friends. Partner and Chef Bill Kalyvas has filled just such a niche in Raleigh with his Taverna Agora. "Absolutely Greek" is their motto, and that they are: from the imported cheeses, wines and olive oil to the blue-and-white checked tablecloths and authentic music in the background. The energy from the rustic bazaar setting is captivating. But if tranquil dining is more your style, ask for a seat under the vined trellis or outside on the patio, where romance is the name of the game. Either way, you'll be overwhelmed by the extensive list of authentic appetizers, one of the most popular (and most exciting) being the flaming cheese plate called saganaki. Expect standard Greek entrées such as braised lamb shank, pork souvlaki and moussaka. Try the makaronia tsoukta, Greek pasta tossed with brown butter, garlic, feta and fresh-grated mizithra cheese. Reservations suggested. Full bar with extensive imported wine list. Serving dinner nightly. Voted Best Greek in Independent Weekly's 2009 Best of the Triangle readers' poll.

The Triangle region of North Carolina has become the epicenter of what national food magazines have dubbed the New Southern movement, perhaps best exemplified by the shrimp and grits popularized at Crook's Corner.
