Le Bouchon (translated as "the cork") in Portland's Pearl District attracts foodies and Francophiles with its French-speaking staff, French owners and French bistro comfort food sans frills. A small bar at the entrance sets the tone, with chalkboard specials and French-themed wall posters. The scene is more romantic during weeknights than weekends, when the bar crowd predominates. Diners rave about the French onion soup, salmon appetizer and scallops. Other traditional starters include escargot in shell, rock shrimp in a white wine and garlic sauce, liver pâté, and mussels. When available, try the signature sweetbreads in a creamy tomato sauce with shallots – the dish is usually hard to find in Portland and is featured as a special at Le Bouchon. Veal kidneys with a red wine and shallot sauce also make the special board periodically. For dessert, try chocolate mousse or crème caramel. If you call a couple of days ahead, the chef can prepare a special dish at your request. From the full bar, splurge on a bottle of French wine from a list arranged by region.
