Starting when she opened her first venture, Flo's Chinese Restaurant, in 1997 in Phoenix, Hong Kong native Florence Chan has successfully brought her mother's recipes to hip, urban eateries. It hasn't been easy. She and husband/business partner Dustin Wallace juggle four restaurants, their nine-year engagement finally culminating in marriage in 2002 on one of their very few days off. Besides maintaining the area's most popular Chinese restaurant at her original site, Flo's Asian Kitchen, opened in 2000 in North Scottsdale, is continued testament to how well their efforts have paid off. The pan-Asian menu pays proper tribute to several nations of the Far East – including China, Japan, Korea, Thailand, Vietnam and Singapore – while tempering the spices to accommodate American taste buds. Appetizers such as Thai lettuce cups, pot stickers and calamari are expected in any Asian restaurant, yet Flo's does a particularly fine job of combining authentic spices and fresh ingredients. Entrées are organized by main ingredient, as diners choose from the expected selection of shrimp, chicken, beef and vegetable dishes. Recommendations include Vietnamese chile orange chicken, and pad thai with shrimp. Meat lovers should consider the combination plates, which combine any arrangement of shrimp, chicken, beef or calamari in preparations such as curry, stir-fried rice or chow mein.
