The meat-and-three and cayenne pepper-spiced skillet-fried chicken are Music City’s truly indigenous foodstuffs, and North Nashville’s appropriately named Prince’s has long reigned as the crown royalty for the latter. Located in a nondescript strip mall, Prince’s is owned by Andre Prince, whose heritage in the kitchen dates back to her great-uncle Thornton Prince, whose girlfriend invented this style of hot chicken as revenge when Thornton came home a little "too late" after a night of carousing. But he loved it. The restaurant has only five booths, and you’ll wait from 20 to 45 minutes for your chicken (either a quarter dark or quarter white meat) to arrive, not long after it leaves its oversized cast iron skillet.
