At the gourmet Picasso restaurant at the Bellagio, a finely executed synthesis of menu, décor and ambiance creates a standout dining experience. The French-inspired cuisine with Spanish influences matches the famed artist Picasso's works – of which millions of dollars worth hangs on the walls – and is prepared by chef Julian Serrano, former winner of the James Beard Foundation Award for Best Chef: Southwest. Large windows overlook the Bellagio fountains, affording a view of the famed water shows every 15 minutes. The menu changes nightly, offering four- or five-course prix fixe meals. Portions are delicate, and flavors are potent. Sample a salad or the poached oysters as a starter. Other courses can include lobster boudin, black bass filet and roasted pigeon with wild rice.
