Since the September 2006 closing of Nichols Lunch, Kansas City's most famous and well-loved greasy spoon, locals have decided to lick their flatware clean and head across town to The Big Biscuit. The diner's two locations in Independence and Blue Springs positively gleam with their large windows, light walls, wood floors and cheery waitstaff serving country breakfasts and lunches. As its name implies, The Big Biscuit features fluffy, fist-sized biscuits smothered in gravy; filled with meat, eggs and cheese; or accompanying a standard offering of super-sized omelets and scrambles. Lots of pancake and waffle choices are also tempting. For those more inclined to keep their waistlines in check, the diner offers one low-carb and two lower-fat egg-substitute and vegetable scrambles, plus raisiny oatmeal and fruit salad. In true diner style, breakfasts are served until closing time, which comes much too early at 2:30 pm. The Big Biscuit could just as easily be called The Big Burger, as the lunch menu features a variety of half-pound burgers, along with grilled sandwiches, both served with fries or soup, and blue plate specials served with mashed potatoes. More unusual offerings include the Elvis burger with bacon, American cheese and peanut butter, and an open-faced brisket melt.
