Sometimes simple is best, as is the case with Kubo's Japanese Restaurant in Houston's Rice Village Arcade. No thumping beats, psychedelic lighting or other urban sushi house tricks are needed to make this much-loved establishment shine — it's the traditional Japanese sashimi, maki and nigiri that have taken center stage since it opened in 2001. A seasoned kitchen trained under some of Japan's master chefs, clean flavors and freshness are the key to Kubo's success. A standard list of favorites is supplemented by specials, including the highly popular spicy tuna mushroom starter that should not be missed when available. Otherwise, trust the chefs and go with what's freshest that day, though several rice and noodle dishes and standard Americanized rolls (California, Philadelphia, spicy tuna) can be hard to pass up. Full bar, including selection of sake. Serving lunch and dinner daily.
