Michel's at the Colony Surf resort has been one of the island's premier fine dining institutions since 1962. From its open-air, beachfront setting to the highly professional, tuxedo-clad staff, this long-standing Oahu staple brings the best in classic Continental cuisine to a white-tablecloth atmosphere. Resort wear may not feel upscale enough when your food is prepared tableside, as many dishes are here. From appetizers such as Black Angus tartare to the flaming soufflés for dessert, there's a multicultural selection of seafood, meat and fowl dishes relished with a fancy supporting cast. (Think along the lines of foie gras and white truffle glazes.) Specialties include: lobster bisque, Hardy's Hawaiian Bouillabaisse and Steak Diane (cognac-glazed with sautéed mushrooms and tomatoes). Dressy casual attire suggested. Reservations suggested. Live jazz entertainment nightly. Full bar. Serving dinner nightly.
