Borrowing the name for ancient Vietnam, Annam is a tribute to traditional Vietnamese cuisine. The pale yellow walls and wicker chairs set the tone for a light and fresh meal that is typical of Vietnamese fare. Soups such as hu tiu sai gon and pho hanoi, both noodle soups flavored with beef, chicken or pork, are recipes that come straight from Saigon and Hanoi, respectively. The appetizer sampler, enough for two or more diners, includes shrimp toast, beef brochettes, chicken satay, spring rolls and crispy rolls. Noodle dishes dominate the list of entrées, but are typically made using limited oil and spices, making them much lighter than other Asian noodle dishes. Other entrées may include sea bass served on vermicelli, roasted chicken marinated in orange juice, and coconut curried chicken. Annam also has a small beer and wine list, and choices rotate often.
