New Saigon is consistently voted the best Vietnamese restaurant in Denver by editors and readers of local publications. It could also win for "most dishes on a menu" with its roughly 250 different offerings, broken into categories by main meat or vegetable. Try something from the roster of chef's specialties, such as the superb bo quan tom (beef wrapped around shrimp, then grilled) or the seafood dishes sautéed in curry and coconut milk. Or start by choosing a primary ingredient such as beef or pork, then a secondary flavoring such as lemongrass, curry or ginger. Adventurous eaters can't go wrong sampling the preparations of jellyfish or lotus root, and New Saigon also has one of the best frog legs menus around. The bottom line: Everything here is wonderful, filled with the freshest ingredients and balanced flavors that make Vietnamese cooking so appealing. Sometimes the language barrier can be an issue, but that only underscores the restaurant's authenticity, and servers work hard to make sure diners leave happy. Although there are few concessions to Western tastes, kids can usually make do with plain rice or a noodle bowl. Beer and wine available. Serving lunch and dinner Tue–Sun. Closed Mon.
